Yess – Los Angeles, CA

Dining at Yess, a contemporary Japanese restaurant, is a true spiritual experience. Located in Los Angeles’ colorful arts district in a former bank building, it features spacious high walls and minimalist design and decor. Despite the sheer size of the space, the dining experience is intimate. Patrons sit one after another at the long cypress counter, watching Chef Junya Yamasaki and his team, dressed in all white like representatives of a culinary cult, work their magic in the kitchen, silently slicing sashimi or carefully grilling skewers of fresh mushrooms, twisting and turning them until they are ready. The food is a kind of meditation on restraint, where less is more and the ingredients take center stage on the plate.

 

Chishuru – London, England

Nigerian-born Adejoke “Joké” Bakare made history this year by becoming the first black woman in the UK to receive a Michelin star. The Chishuru restaurant didn’t open in its current form until 2023, moving from the vibrant South London neighborhood where Bakare started after winning a local competition in 2019 to a new, larger location. The new iteration of the restaurant operates on a set menu only ($95 per person for dinner; $50 per person for lunch). On the menu, you’ll find pepper soup with dried mackerel or lamb cutlet with coffee and yaji sauce.

 

Datil – Paris, France

When you combine popular chef Manon Fleury, a predominantly female team, a culinary philosophy centered on growing plants, and a bright interior, you get Datil, the talented young chef’s first restaurant located in the northern part of Paris’ Marais neighborhood. Fleury has always emphasized local produce, treating meat and fish as add-ons. Here, however, the dishes are more than just an assemblage of organic ingredients. They emerge from the semi-open kitchen as artistic compositions meant for reflection. The menu changes seasonally, but highlights include rutabaga and pink radish layered with garlic cream, almonds, harissa and thinly sliced scallops, and celeriac and mushroom puree with consommé congee garnished with candy flowers.

 

Trescha – Buenos Aires, Argentina

When opening Trescha in March 2023, Tomasz Treszanski took a gamble with only one haute cuisine restaurant in Buenos Aires. However, now that he has a Michelin star and the bonus of the ” Young Chef” prize behind him, the risk was worth taking. Occupying a converted house in the Villa Crespo neighborhood, this exclusive restaurant features a bar with an impressive whiskey collection, an inviting glass-fronted terrace and a contemporary-style dining room with a single but elegant cedar wood counter for 10 guests to mingle with the chef. The kitchen is based on a single 15-course tasting menu (which changes every three months) created from premium seasonal ingredients and various cooking techniques (emulsions, foams, jellies, stews, etc.) on a single plate.

 

Andreu Genestra – Mallorca, Spain

In April 2011, Andreu Genestra opened his first eco-friendly restaurant in Capdepera, a remote corner of his beloved Mallorca. Over a decade later (and with several Michelin stars under his belt), the chef introduced the second iteration of Restaurante Andreu Genestra at the luxurious Hotel Zoëtry Mallorca, located in the larger municipality of Llucmayor. The restaurant’s Mediterranean concept features local ingredients sourced from a biodynamic vegetable garden, vineyards, beehives and olive trees, as well as from local Mallorcan farmers and producers.

 

The Devonshire – London, England

Modern restaurants in London are not a new phenomenon. But The Devonshire, located near Piccadilly Circus, has achieved a level of hype that hasn’t been seen in a long time. Leading all the hype is Oisin Rogers, an old-school landlord who has been working in London pubs for 30 years. The kitchen is run by Ashley Palmer-Watts, whose menu features dishes cooked on wood-fired grills and ovens, such as duck meat chips, sausage puddings, and scallops with bacon and malt vinegar.

 

Naar – Darwah, India

Chef Pratik Sadhu’s ambitions as a culinary innovator are defined by two words: faeter (a Kashmiri word meaning “crazy”) and naar (“fire”). So it’s no surprise that one of India’s most renowned chefs has announced his return by opening a restaurant aptly named Naar. Set amidst the pine forests of Himachal Pradesh, this unique restaurant offers a culinary journey through the Himalayas, from north to east India. The 16-seater restaurant serves six different menus throughout the year that correspond to the changing seasons in the mountains, as well as dishes that transform traditional food into unusual ‘surprises’.

 

Fish Shop – Ballater, Scotland

Despite its name, Fish Shop is not a classic British diner, but an elegant seafood restaurant with its own fish store. With wicker fish models hanging from the ceiling, there’s a lot to like about this chic spot – from the sincere, professional service to the range of high quality fish and shellfish. The local and seasonal menu might include champagne tempura oysters from Cape Worth or Shetland mussels with dried nduja from the East Coast.

 

Oseille – Rio de Janeiro, Brazil

In late 2023, Chef Thomas Troisgros, the fourth generation of a famous French culinary dynasty, opened Toto, a restaurant reminiscent of a Parisian neo-bistro, but with a menu inspired by the chef’s travels around the world. The restaurant, located in a townhouse in the bustling center of Ipanema, quickly gained popularity. However, Troisgros confidently stated that the restaurant had the potential to create a higher level of service and envisioned opening Oseille in the vacant upper part of the same building. With the help of a team of 3, the chef created a 16-seat counter around the equipped kitchen where he now exclusively serves signature tasting menus (5 or 7 courses) that change periodically but are always based on local and seasonal ingredients, combining his French heritage with Asian influences, all with a Brazilian accent. The level of hospitality makes diners feel as if they’ve been invited into the chef’s home – guests can even choose their own background music to suit them.

 

Barro – Avila, Spain

Located in Ávila, about 90 minutes from the center of Madrid, Barro Restaurant is a modern take on rustic style using local ingredients. This savvy approach earned the restaurant its first Michelin star, making Carlos Casillas the youngest chef to receive it in Spain. Once in his restaurant, where the décor is minimalist, try the 15-course Alberche tasting menu, including suckling pig with kimchi brava sauce, 150-day aged prime rib with hollandaise sauce and consommé with fermented tomato water.
